糖是我們在生活中常常使用的調味料,從做蛋糕到味飲料增添甜度都會使用糖。但是大家有想過糖是怎麼做出來的嗎?
首先,糖的原料是從甘蔗或甜菜來的。一般的植物都以澱粉的形式儲存養分,蔗糖的含量比較低,但是這兩種植物的蔗糖含量比一般植物來的高。而製糖廠就是要把植物裡的蔗糖提煉出來。 製糖的第一步就是把甘蔗汁榨出來,一般會重複幾次以確保能把汁液都榨出。把殘渣去掉後把蔗液收集起來並加入石灰,石灰會使甘蔗液裡的雜質沉澱,接著導入二氧化碳氣體,讓溶液裡形成碳酸鈣,碳酸鈣能吸附色素和雜質。這樣就能達到去色以及題高純度的效果。接著利用真空減壓的方式加速水分的蒸發,濃縮糖液。接著再把糖液送至結晶罐沸煮,蒸發剩餘的水分。這時,結晶體會和濃縮的糖液混和在一起形成"糖膏"。而製糖的最後程序就是把糖膏放進離心機,讓離心機以高速的旋轉把晶體分離出來。如果分離出來的晶體不符合標準,就必須要重新溶解後再進行一次分離。分離出來的晶體還需要甲以乾燥以免潮解。以上就是製糖的大致流程,下次喝茶要加糖的時後要好好珍惜,因為糖的製作流程是要經過很多程序的!得來不易!
